My recipe of pecan nuts brownie

 Hey Charlie !!

 Here is the recipe of my favourite chocolate cake !! It’s a pecan nuts brownie that I found in a recipe book. I’m basically not a great fan of chocolate cakes but this one really changed the thing, it is just amazing ! 

I baked it a few times and everybody that ate it asked me the recipe ;)

 This is basically a french recipe but I converted the grams on cups so that english bloggers can also try it :) 


For 8 persons / 15 min of preparation / 33min of cooking / 15cm square mould (it also works with a circular one but try to have the measure) 


  •  180g or 1+1/2 cup of pecan nuts (whole or crushed)

  •  200g (often the size of a bar) of dark chocolate 

  •  180g or 3/4 cup of butter 

  •  3 eggs 

  • 100g or 1/3 cup of white sugar 

  • 180g or 1 cup of brown sugar 

  • 100g or 90 ml of liquid cream 

  •  110g or 3/4 cup of flour 


  •  Turn on the oven at 170 C or 340 F 

  • Toast the nuts dry in a warm stove until they become crispy and smells great 

  •  Melt the chocolate in a water bath and add the butter 

  •  Melt a little bit more and mix until it becomes homogenous 

  • Whisk the eggs with both sugars until it becomes whiter 

  • Add the cream, flour et pecan nuts, mixing well between all of them 

  • Butter the mould and sprinkle some brown sugar to make it crispy 

  • Pour the preparation in the mould with about 3 cm of thickness 

  • Cook it 33min 

  •  Remove from oven and unmould it … it’s ready !!

Happy belated Thanksgiving!


Hey Charlie,
Thursday not being a day off here in France, you might have celebrated Thanksgiving last weekend like I did.
I enjoy celebrating Thanksgiving with my loved ones and I find it important to take a moment in our crazy schedule to reflect on and give thanks about the blessings in our lives. I also have many fond memories of  my first experience of the Canadian Thanksgiving last year.

By the way, here's my cornbread recipe requested by Judith in an earlier comment.

1 cup all-purpose flour
1 cup yellow, white, or blue cornmeal
2 to 4 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 eggs
1 cup milk
1/4 cup cooking oil or shortening melted
(A small can of corn to add crunch to your bread)

In a mixing bowl, stir together flour, cornmeal, sugar, baking powder, and salt. In another bowl beat together eggs, milk and oil or melted shortening. Add flour mixture and stir just till batter is smooth ( do not overbeat) Add  some canned corn if you want your bread to be crunchy. 
 Pour into a greased 9x9x2 inch baking pan. Bake in a 425° oven for 20 to 25 minutesor till golden brown. Makes 8-9 servings.  
It's easy-to-make and delicious. Tuck in!

However, I am also well-aware of how controversial Thanksgiving can be when  you consider native American history and I do. And I'm not even mentioning the fate of those poor turkeys!
 (By the way, I  hereby apologize for the photo I've posted above who might have traumatized our most sensitive readers)
To make a long story short, I have mixed feelings. How about you?

Heeeyyy

So Charlie, I don't know about you but I am the kind of people that are said to have a sweet tooth, even though I would basically call myself a sweet freakin' jaw since I love pastries so much!!
And, saddly, pastries do not grows on trees ( maybe in Wonderland or Willy Wonka's factory, but not our cold and dull reality :c ) so it pushes me to try and satisfy this titanic hunger by myself. Since my whims change almost everyday I've started to fitch good recipes online and I found the perfect website for someone feeling like cooking; but really don't judge by the name of it or I will probably be banned of this blog (and of OIB) : FoodPornDaily. So just to make clear NO IT'S NOT WHAT YOU THINK IT IS !!!! I LOVE FOOD BUT NOT IN THAT WAY!!!
It's actually a website that posts daily a picture of a delicious looking meal or pastry, of really any kind, and that will give you the link to the recipe on the blog owner that posted it.
This allowed me to discover cooking blogs of real chiefs and an endless recipe catalog to try!
I actually have tried and succeeded some of the recipes and they turned out as good as they looked !!

Crumblicious

Hi Charlie !
I know I know, I haven't posted an article since... well long ago. BUT here is a little something to apologize !
When I need to cheer up a bit and I don't feel like hanging out, one of the best ways to relax is, to me, cook a little bit... Especially pastries since I have a sweet tooth :) 
So, let's cook !! (but not methanphetamine we're not in Breaking Bad.)


BERRIES CRUMBLE

Crumbs (top and bottom)
 220g all purpose flour
 110g sugar (half brown, half cane)
 2 tea spoon (tsp) baking powder
1/2 tsp salt
110g unsalted butter, chilled and cut to cubes
1 large egg, light beaten
1 tsp vanilla extract

Filling
3 cups frozen or fresh berries
1 table spoon (tbs) lemon juice
2 tbs cornstarch
50g – 100g cane sugar (use more or less depending on berries)
1/2 tsp cinnamon (optional)
Pinch of salt

Optional
Whipped cream or ice cream
Lemon or lime zest
Powdered sugar

Directions:
1. Preheat the oven to 350 F.
2. In a bowl, whisk together flour, sugar, baking powder and salt. Add the butter, egg and vanilla.
3. Use a fork or your fingers to quickly incorporate everything until it resembles a very coarse crumb with lumps. Don’t overwork it. Place the bowl of crumbs in the fridge.
4. In a bowl, mix together the berries, lemon juice, cornstarch and sugar.
5. Press half the chilled crumb evenly onto the bottom of a lightly buttered 9″ pie dish. Top with berries and sprinkle remaining crumbs on top of the berries. It should almost cover the berries.
6. Place the pie dish on a baking sheet lined with aluminum foil. Bake it for 35 – 45 minutes or until top is golden brown.
7. Allow to cool for 10 minutes before slicing. (optional: Serve with whipped cream or ice cream, zest and powdered sugar.)

Notes:
1. If you like more crumbs on the top or bottom or both, increase the amount for crumble by half or double.
2. Large batches of crumbs can be made and freeze for future use.
